This project, the Open Fermentation Series, will feature beers open fermented on site in the same single oak barrel. The 3rd in the series, Chapter 3 is an imperial Hefeweizen brewed with malt from Colorado’s own Troubadour Maltings of Fort Collins. What will make this process even more unique is the journey the beer itself will take. Each batch will differ as the barrel, malts, and hops change and as the yeast acclimates to our water and malt chemistry. This beer will be a new adventure in transformation, hence the name, with victory seasoning each sip you take.

Hero's Journey Chapter 3 pours slightly hazy with big banana bread esters on the nose. Banana bread continues from the aroma to the palette and is delicately hinted with orange peel on the back of the mouth. We use the term “Imperial” as this Hefe comes in at 6.8% instead of the characteristic 4% range for most traditional Hefewizens.

As these are made in small, single barrel batches, this is a tap-room only offering.
