fOOD TRAILER OPERATIONS MANAGER

ABOUT THE ROLE
We're looking for a hands-on, systems-minded operations leader to oversee our growing fleet of food trailers. 4NB Holdings operates three stationary food trailers serving as the kitchens for our brewery taprooms — a Detroit-style pizza concept at Wild Provisions Beer Project in Boulder; AND a smash-burger concept with duplicate trailers at 4 Noses-Broomfield and Odd13 Brewing in Lafayette. We will soon be completing our fleet, with a second pizza trailer at 4 Noses-Denver. Our stationary trailers are quick-service and high-quality, bridging the gap between a permanent kitchen and a food truck.
Our initial three trailers are built out, staffed, and are currently selling a menu that our guests are pleased with. We’re looking for someone who can take them to the next level: improving the menu, developing systems, improving organization, refining training, and growing profitability. This role is neither a strictly Chef/culinary role nor solely a back-office position. You'll be in the field, building the systems, training the team, and making sure every location runs smoothly with or without you present.
RESPONSIBILITIES
Hire, train, and schedule staff across all trailer locations
Oversee day-to-day operations for 3 (soon 4) food trailers
Launch trailer #4 (hiring, training, stocking with food/wares)
Place orders and maintain lean, smart inventory levels, using sales data to guide purchasing decisions
Ensure food quality throughout the full chain: receiving, storage, prep, and service
Track and manage food and labor costs to maintain profitability
Build systems and training programs that keep operations running smoothly, even in your absence
Proactively maintain equipment, anticipate supply needs, and ensure staff have the tools to do their jobs well
Keep the menuS dynamic and fresh, with rotating specials
Cover shifts when staffing requires it
P&L reporting to leadership
WHAT WE’RE LOOKING FOR
Proven experience managing food service operations, ideally across multiple locations
Experience building or implementing training systems and operational standards
A proactive, ownership-oriented mindset: you bring problems and solutions together
Strong understanding of food and labor cost management
Ability to read and act on sales data: product mix, velocity, inventory implications
Comfortable working evenings and weekends as part of a regular schedule
ServSafe Management certification or equivalent (or willingness to obtain)
Valid driver's license
COMPENSATION AND BENEFITS
$60,000-$80,000/yEAR (FULL-TIME, SALARY, OVERTIME EXEMPT)
